Banana & Walnut Cake

I am starting today with a sweet post. This is my favorite recipe for Banana & Walnut Cake. It is super moist and full of banana flavor with the crunchiness of almonds. The Chinese believe that walnuts are good brain food and helps with memory. I on the other hand just love to eat them!

Ingredients:

1 1/2 Cups Flour

1 1/2 Cups Sugar

1/2 Cup Butter

1/2 Cup Evaporated Milk

2 Egg

3 Bananas (I like to use ripened bananas with spots)

2 Teaspoon Vanilla

1 Teaspoon Baking Soda

1 Cup Chopped Walnuts

Heat oven to 350°F. In a large mixing bowl cream butter, vanilla and sugar until light and fluffy. Beat in eggs, one at a time. Sift flour and baking soda.  Mix mashed bananas and milk together. Blend dry ingredients into batter alternating with banana mixture. Stir in chopped nuts. Pour batter into 2 greased and floured 8-inch round or square baking pans. Bake for 30 to 40 minutes or until cake tester inserted in center comes out clean. Cool 10 minutes, then turn out on racks until thoroughly cool. Slice it up and serve with coffee or tea! So good.
