Gourmet Chocolate Chunk Cookies

Sundays are great for spending time with your family and relaxing so I try to minimize cooking as much as I can and make stuff from the day before. I love thick, chewy soft chocolate chunk cookies with a big glass of cold milk and this next recipe hits all the spots. This cookie dough is made from the standard cookie dough ingredients except that I use cornstarch for that ultra soft baked consistency and melted butter which adds to the chewiness. Since you are using melted butter you don’t need a mixer.

2 1/4 Cups Flour

3/4 Brown Sugar

1/2 Cup of White Sugar

1 Large Egg +1 Egg Yolk

1 1/2 Sticks of Melted Butter

1/2 Teaspoon Salt Salt

1 Teaspoon Baking Soda

1/4 Teaspoon Cornstarch

2 Teaspoons Vanilla

1 Cup Chocolate Chunks

Begin by whisking together flour, baking soda, cornstarch and salt in a bowl. In a separate bowl whisk sugar and butter until no lumps remain then add eggs and vanilla. Mix wet and dry ingredients together in a large bowl with spoon or rubber spatula. Finally add chocolate chunks and mix in. Refrigerate for 3 hours or overnight. When baking, remove from refrigerator and let sit for 10 minutes to soften. Roll into cookie balls and place in cookie tray lined with silicone baking mats or parchment paper. Preheat oven to 325 degrees and bake cookies for 11-12 minutes. Cool on wire rack and enjoy with that glass of milk!
