Blueberry Muffin

I love this recipe for Blueberry Muffin.  These are the most amazing blueberry muffins that I have ever eaten. It has more blueberries per muffin than your average one but this can be a bad thing because you wont be able to stop at just one!


2 1/2 Cups Fresh Blueberries

2 Cups All Purpose Flour

1 Cup Sugar

1 Cup Milk

2 Eggs

1 Teaspoon Baking Powder

1 Teaspoon Vanilla

1/4 Teaspoon Salt

Directions: Heat oven to 375 degrees. In bowl mix butter and sugar until creamy. Add eggs one at a time then add vanilla, baking powder and salt. With spoon, fold in half of flour then half of milk into batter and repeat. Next fold in blueberries and spoon into muffin. Bake 15 to 20 minutes, until golden brown and springy to touch. Makes 12 large muffins.
